Our Little Photographer




I think that many professional photographers would be talking if we released these wonderful photographs to the public. Emma at some point or another found my camera and took some pictures and then put the camera back without me knowing. I think she is trying to pick up a new hobby...maybe I should get her one of those kid-proof cameras for Christmas this year.

On Monday Night, we decided to brave the cold and ride Trax from Sandy to SLC to go to temple square. Emma enjoyed seeing the ' Jesus Temple', the Jesus statue , and as she called it the ' Joseph Smif Statula' (I guess that is a mix between a statue and a spatula). On our ride home on trax the trax car broke down and we had to get off an wait for a replacement train to come and get us....it was very annoying, only because it was cold. We had a lot of fun though.

Marcus Sick Still



Marcus has been sick for quite a while. I finally took him into the doctor today and they said that he has a double ear infection. The doctor said that he was planning on giving Marcus some antibiotics anyways becasue he has had a cough for 3-4 weeks. His lungs did sound good though which is good because RSV is such a hard thing to deal with. Even though he is sick doesnt mean he is sad, in fact when he was laying on the doctor table before the doctor came in he was laughing and smiling away, I was second questioning myself for why I brought him in,....I am glad that I did.

Happy Valentines Day!

Happy Valentines day to Eric, my wonderful husband. I woke up this morning and he had bought Emma and I both flowers. He also bought me a cold stone gift card and Emma a Nascar sticker book. He was so nice and thoughtful. I stayed home from work to make Eric a breakfast, so Emma and I made French Toast on French Bread with Strawberries and whipped cream.

Marcus Talking

Marcus' new thing to do is to talk. I wish that it was comprehendable, but its not. He just likes to hear his voice. It cracks me up, and I thought that you grandparents that are far away would appreciate it. You can also see how fast he is growing up. His snuggly baby is gone. He is now wanting to be more independant already. I am in trouble for when he turns 16.

New Recipe's for Party

Here are a couple of great recipe's that we used at our party, they were great and an big hit.

Extremely Tender Pork Crock-pot Spareribs


Ingredients:

2 sides pork spareribs (about 6 pounds), separated
1 (28-ounce) can tomatoes in Puree
1/3 cup brown sugar
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon reduced-sodium soy sauce
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Directions:

1. Separate ribs and cut in half so that they fit into the crock-pot.

2. Mix All ingredients together and place in the crock-pot with ribs.

3. Cook on Low for 6-8 Hours. These are so tender that I can’t keep them on the bone. It ends up being like shredded pork, but it is really good.

Italian Chicken Strips


Ingredients:

1 cup seasoned bread crumbs
1/2 cup freshly grated Parmesan
11/2 teaspoons dried thyme
11/2 teaspoons dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon garlic powder
Pinch ground red pepper
8 boneless chicken breast halves, cut into 1/2-inch strips
1/2 cup (1 stick) melted butter
Marinara sauce or honey mustard, for dipping

Directions:

1. Preheat Oven to 400 deg.

2. Place all of the seasonings in a pie place and mix together. Dip the chicken strips into the melted butter and then into the Italian seasoning.

3. Place on a baking sheet. Cook for 20 minutes or until chicken is cooked all the way through. Serve with marinara or honey mustard sauce

Sunday of Happiness and Mourning





Last Sunday we had a Birthday Party for Eric and Dan. We just had a couple of Eric's Family and Friends over for dinner. Here are some pictures. Later that night we found out that our Prophet, President Hinckley died in his Salt Lake Apartment at 7 pm Sunday Jan. 27th. We will miss him but look forward to the future of the Church with our new prophet President Monson.
